Adam Liaw’s raita and chips
Raita is often considered to be a cooling condiment that’s eaten with a curry, but it’s a great side dish in its own right. Serve it with potato chips for a bit of crunch.
Ingredients
1½ cups thick yoghurt
½ Lebanese cucumber, peeled, quartered lengthways and thinly sliced
¼ red onion, peeled and diced
½ tomato, deseeded and diced
¼ cup roughly chopped coriander leaves
salt and black pepper, to season
1 packet thin salted potato chips
Method
Step 1
Combine the yoghurt, cucumber, onion, tomato and coriander and season well with salt and pepper.
Step 2
Serve with the potato chips.
Adam’s tip: Raita is commonly served with biryani and pilaf dishes to balance the texture of the rice. You can add a sprinkle of cumin or chilli powder for a bit of extra interest.
