At Lucky Garden’s Madam Tim Chicken Rice, a comforting chicken rice laced with a remarkable ginger paste

KUALA LUMPUR, Sep 27 — In the never-ending, self-destructive pursuit of the newest, hottest, most viral food, we’ve forgotten the capacity of a run-of-the-mill, everyday meal to excite and satisfy — and, more than that, to jolt us awake from the AI-generated negative feedback loop we call our daily routine. 

Or maybe that’s just me.

Every neighbourhood should have a place like that: a restaurant or a stall that keeps you well fed, even tantalises the senses, without drawing too much attention to itself. 

Everyone should be able to grab breakfast there before heading out to face the horrors of the day, or come for a restorative lunch and leave refreshed and revitalised.

Bangsar’s Lucky Garden has had its share of places like these, especially in the Pusat Penjaja that the time-honoured Anuar Fish Head Curry calls home.

Madam Tim Chicken Rice is one of the centre’s newer vendors, only a few months in, serving the tried and tested classic working man’s food: chicken rice.

Madam Tim’s stall is on the other end of the hawker centre, nondescript and flanked by two drink stalls. 

All three sport signs and posters indistinguishable from one another: the same unnatural, uncanny AI-generated food and drink imagery, smooth and devoid of anything remotely resembling life. 

It’s become especially prevalent among food businesses recently, but there’s no value in moralising at independent operators for using it. 

As long as the cost of human-generated visuals remains rightfully higher than slop, the catch-22 will persist. 

Nobody wins — not the businesses, not us diners. Only a few ghoulish billionaires. Big chains using AI, though, can go do one.

The “madam” herself is the sole operator of the stall, which offers a choice of “normal” or “free-range” chicken, but only poached, with either rice or hor fun. 

You could opt for the chicken thigh rice set and leave only RM9 poorer, or you could be like me and get the entire lower quarter for RM18. 

The poached chicken has reasonably smooth skin, the flesh is succulent enough, and the bean sprouts below it are decently crunchy. 

Nothing groundbreaking, but all still very satisfying.

Then she brings a jar each of chilli sauce and ginger paste; the former is similarly unremarkable, but the latter is pure, unadulterated dynamite.

Not because it is fiery and explosive, but because it is dynamite in the thrilling, electrifying sense. 

Common enough to be relegated to an afterthought, the condiment can vary from a simple mixture of blended ginger and hot oil to the deep, dark reduction of ginger, garlic and scallions you can find at Kong Sai in Taman Paramount. 

This belongs to neither camp; the chunks of ginger are rough and uneven, the colour sitting somewhere between brown and a strange grey. 

Each bite is a hefty dose of sweet and savoury notes; the warm punch of ginger remains, but mellowed. 

It’s hit after hit of balanced intensity. 

She tells me she uses whole pieces of ginger, cooked down for hours with a mixture of soy sauce and oyster sauce, before pounding it by hand. 

I spied a shallot or two, but I won’t tell.

I finished the whole jar. She noticed and offered to bring more. 

I thanked her, sheepishly, and decided against indulging my greed any further. 

Really, every neighbourhood should have its own Madam Tim. If you do, count yourself lucky. If you don’t, go looking. Because they’re still out there, in every neighbourhood — at least for now.
