Sardine Dining
Forgive the obvious, but there’s no more logical or instructive way to start than with sardines. Swimming in a sea of chive oil, silver-skinned fillets reflect the light of the shimmering straits just outside the window. Fresh grapes and tongue-coating drops of aioli add extra oomph.
Opened in 2017 as a showcase for the abundance of the nearby Lakes Entrance fisheries, this serene fine diner might deploy calamari in a reimagining of bolognese, grill whole John Dory on a charcoal-fuelled hibachi, or dry age snapper and slice it for iridescent sashimi. There’s plenty else besides seafood, too.
In the warmer months, Sardine’s spacious deck is a prime position to take in pristine shoreline and an unbroken view of Raymond Island. On cooler evenings, the spacious dining room is warmed by a fireplace, best enjoyed with a pour from the expansive and proudly parochial wine cellar.
Best for: A fine-dining respite after a day on the water.
